I bought live shrimp, rinsed with water, and you can cut off the shrimp whiskers or not. I cut off the shrimp whiskers.

Put the oil, cooking wine, allspice, pepper, salt and shrimp into a bowl and soak overnight.

Find a larger waterless basin and put cornstarch in it first. If you don't have cornstarch, you can also use flour, but it won't be as delicious when fried with cornstarch. Put the dried shrimp seasoning into the empty basin, stir, coat all sides with cornstarch, and put it on an empty plate.

Coat it with corn starch like this. Heat oil in a pan until it is 70% hot.

Burn the oil until it is 70% hot. If you are not sure what 70% hot is, you can put your hand on the oil and feel the heat (it is more dangerous), or you can try it by putting one in first, as shown in the picture, put in all the shrimps, stir quickly with chopsticks to avoid sticking together, and change the high heat to a low heat.

Fry until both sides are golden brown, then take them out, drain away the oil and place on a plate.
