Prepare the ingredients and cut all the ingredients into cubes. Add cooking wine to the chicken, a little salt and sweet potato starch and set aside.

Heat the pan and add oil. First stir-fry the diced chicken, take it out and set aside. Then add oil to the pan and stir-fry the ginger until fragrant. Stir-fry the carrots, potatoes, and diced onions. Add water and curry paste and simmer for about 20 minutes. Be careful not to burn the pan.

When it is soft, add the diced chicken and continue to simmer until the juice is reduced. If you like the juice, leave more juice. If you don't like it, leave less juice. At the end, sprinkle with chopped green onion and it's ready!
