German alkaline bread
Overview
This bread is also called beer bread. It is said that eating this bread is not harmful to the human body no matter how much beer you drink. It is soaked in alkaline water and then baked. When tasted fresh, it has an alkaline flavor and is very chewy.

Weigh all the bread ingredients except butter and put them into the mixing bowl.

Slowly mix the dough into a dough.

Add butter

After the butter melts, knead in the second gear for about 4 minutes.

Take out the dough, beat it on the board, knead it into a ball and let it rise for 30 minutes.

After 30 minutes, the dough will have expanded slightly.

Divide the dough into six equal portions and roll into balls. (I doubled it)

Cover with plastic wrap and let rise for another 30 minutes.

Take out a piece of dough that has risen and flatten it to release the air.

Fold back from 1/4 and press firmly.

Fold another 1/4 and press firmly.

Turn the dough over and fold the remaining portion on top.

Roll into a long strip. As shown in the picture above, roll both sides into a long strip and bulge in the middle.

Tie a knot

Place in the freezer of the refrigerator to freeze until the skin is frozen hard.

Melt the baking soda in warm water, put the frozen bread embryo into it and soak it for 20-30 seconds, take it out and put it on a baking sheet lined with tin foil. (It is best to wear gloves for this step, because the baking soda is highly corrosive.) Use a sharp blade to make a cut on the bread, and sprinkle some sesame seeds as decoration. It would be better if there is sea salt. Place in the preheated oven at 200 degrees and bake for 25 minutes.
