Eat both spring brains

Overview

When I have time at home, I read books, haha, recipes. This is a cookbook I bought a long time ago. I think I was about the same age as my son. I have wanted to make this dish for a long time, but I don’t have a food processor at home. Now that I have it, I can finally give it a try.

  1. Soak the rice in three bowls of water for three hours, then put it into a food processor and grind it together with the water

  2. Pour into a basin

  3. Strain the rice juice

  4. Take an empty bowl, add water, starch

  5. Add salt

  6. Add pepper to make gravy

  7. Add the prepared water starch to thicken

  8. Stir constantly with a vegetable spoon to avoid burning the pot

  9. When the rice milk becomes thick, put it on a plate and put it into a steamer to steam

  10. Dice the chicken, core and dice the red dates, dice the carrots, and mince the green onions

  11. After the rice milk is steamed, take it out and leave it for a while to cool and then take shape

  12. The broken rice left after decanting the rice milk is also steamed in a pot in line with the principle of not wasting it

  13. Place in a steamer and steam until cooked, take out and let cool

  14. Invert into a plate

  15. Core and dice the red dates, dice the carrots and chicken respectively, and chop the green onions

  16. Heat oil in a pan, add diced chicken and chopped vegetables and stir-fry until fragrant

  17. Add dark soy sauce

  18. Add salt

  19. Add water and bring to boil

  20. Adjust appropriate amount of water starch to thicken

  21. Pour juice

  22. When the spring brain is at this level, it’s ready to be poured with juice
