Cut half a black-bone chicken into pieces, rinse it with clean water several times, put it in a pot with cold water, add a few slices of ginger, bring it to a boil, take it out and rinse it thoroughly.

Pour the black-bone chicken pieces into the pot (any pot that can make soup will do), add a few slices of ginger, a few washed red dates, add enough water to cover the chicken pieces, add a little salt, and start stewing. I used a rice cooker and simmered it for about an hour

After stewing, taste the saltiness first, and decide whether to add more salt according to your personal taste. Because the stewed chicken soup itself is fresh, it is personal decision whether to add chicken essence. I will add a little bit each time to improve the freshness. I like onions, so I put the freshly stewed soup into a small bowl and add a little chopped green onions.
