Fake Mapo Tofu
Overview
This year’s Mid-Autumn Festival and National Day holiday is relatively long, lasting 8 days. I didn’t want to go out and be crowded, so I spent the whole day tinkering in the kitchen and volunteered to cook a few vegetables and bake some snacks. Today’s plate of counterfeit Mapo Tofu uses the new corn beef sauce from A Kuan’s family. Beef is very expensive these days, so I can’t bear to buy it, so I’ll use this sauce instead. It’s simple, easy and tastes pretty good.

Cut the tofu into pieces, not too big, because the tofu itself is tasteless, and it will not be easy to taste if it is too big.

Wash the mushrooms and tear them into small pieces.

Just the right amount of beef sauce. This one is a bit spicy, so adjust it according to your own spiciness level. I added 2 tablespoons, which was a bit spicy.

Cut some shredded ginger. You don’t need to use other ingredients because the sauce has more flavor.

Boil a pot of water, blanch the mushrooms for one minute, then drain and drain the water. Because my mother didn't like the taste of this mushroom, she blanched it. If you don't mind, you don't have to blanch it.

Heat the pot and pour in a little less oil than usual for cooking, about thirty to forty milliliters, because there is oil in the sauce. First add shredded ginger and sauté until fragrant, then add beef sauce and stir-fry for one minute.

Add the mushrooms and stir-fry for one minute.

Pour in the tofu and fry for a minute or two, it will be fragrant and delicious.

Add a bowl of water enough to cover the tofu.

After boiling, taste the saltiness, add appropriate amount of salt to taste according to your own taste, mix well, cover the pot and simmer for three to five minutes.

Fill half a bowl of water and add a teaspoon of cornstarch to make water starch.

Open the lid and when the water is half boiled, pour in the water starch, gently stir it a few times, and simmer for a minute or two. When the water starch becomes transparent, turn off the heat.

Finally, put it on a plate and sprinkle with a little chopped green onion or coriander.
