For cooked corn, remove the kernels. You can also use bagged corn kernels sold in supermarkets.

Add three spoons of starch and mix well. Because there is still a small amount of water powder on the surface of the corn kernels, it can be coated with starch.

Pour more oil into the pot and heat it

When the oil is hot, add the corn kernels and break them up with chopsticks while frying to avoid clumping.

Fry until golden brown and everything floats to the surface of the oil. Take it out. Be sure not to over-fry, otherwise the color will not be beautiful. Moreover, the corn kernels are cooked and do not need to be fried for too long.

Pour a small amount of oil into another pot, pour the crushed egg yolk into the pot, stir-fry quickly until it bubbles, then pour in the corn kernels and stir-fry a few times quickly to coat all the corn ingredients with egg yolk, then take it out of the pan immediately. Be sure to do it quickly, otherwise it will turn black if it is slower. This step requires speed so I didn't have time to take pictures.
