Pineapple Duck

Wash the duck and cut into pieces.

Dice pineapple, sour chili, sour ginger, garlic and ginger and set aside.

Add a small amount of oil to the wok, add garlic and ginger and sauté until fragrant.

Heat the oil over high heat, put the duck meat into the pot and stir-fry.

Stir-fry over high heat to bring out the moisture in the duck meat.

Check to see if the moisture in the duck meat is dry, stir-fry the duck meat until fragrant and release the oil, then add light soy sauce and stir-fry. (If the duck meat is not dry, it will be difficult to absorb the pineapple juice.)

Add the sliced pineapple to the pot.

Cover the pot and simmer the pineapple over medium-low heat.

Stir-fry the pineapple and duck meat until the pineapple softens and the juice is released.

Add an appropriate amount of salt, cover the pot and continue to simmer the duck. Open the lid and stir-fry every once in a while to prevent the duck from burning and sticking to the pot.

Add sour chili pepper (the amount can be added according to personal taste), sour ginger, and stir-fry continuously.

Stir-fry until spicy and sour, then serve. You can also continue to heat it over the fire and add some tofu, powder, vegetables, etc. for consumption.
