Steps
-
Prepare materials
-
Egg yolk and egg white separation
-
Add egg yolks to milk and corn oil, stir
-
Sift in flour
-
Stir until seed-free and set aside
-
Add lemon juice to the egg whites, use an electric egg beater to make large peaks, and continue to beat. While beating, add sugar and cornstarch in two batches and continue to beat.
-
Whisk until the texture is clean and not flowing.
-
Add one third of the egg whites to the egg whites and mix evenly, then pour the egg white and egg yolk mixture back into the remaining egg whites and mix evenly to form a cake batter.
-
Divide the cake batter into paper cups. It only needs to be 80% full. It will expand after baking.
-
Preheat the oven to 145 degrees for 35 minutes. When the time is up, let it simmer for another minute or two and it will be ready!

Picture of the finished product (the material list shows 6 eggs, which can make about 14 to 20 cupcakes. I have an activity at my son’s school today and made 30 eggs, so there are a lot of cupcakes in the picture of the finished product, 😜)
