Cut the beef into thin slices and cut the green pepper into cubes. If you don’t like green pepper, you can use celery or garlic leaves.

Put the beef into a bowl, add cooking wine, light soy sauce, oyster sauce, salt and chicken essence.

Add water to the starch to make watery starch, pour it into the beef and stir evenly.

After stirring, let it sit for 15 minutes.

Heat the wok and stir-fry the beef. The key to stir-frying the beef is to use high heat and oil. Heat the wok until it emits green smoke. Pour in an appropriate amount of cooking oil. Add in dried chili peppers, garlic cloves and ginger slices and stir-fry until fragrant.

Pour in the beef and stir-fry, turning the beef as much as possible so that it is heated evenly.

After the beef turns white, add the green pepper. Those who prefer celery and garlic leaves can add it later.
