Overview
Spring cake [chūnbǐng] Eating spring cake is one of the Chinese folk dietary customs at the beginning of spring. In some areas, there is a custom of eating spring cakes at the beginning of spring. Spring cakes in Northeast China and Beijing are the most delicious. It is said that spring pancakes, as a traditional Chaozhou snack, evolved from Chaozhou’s ancient folk snacks, yet to be verified. Spring pancakes are pancakes baked with flour, usually rolled into vegetables. At first, spring pancakes and vegetables were put on a plate to become a spring plate. The Song Dynasty's "Sui Sui Guang Ji" quoted from the Tang Dynasty's "Four Seasons Treasure Mirror" records: At the beginning of spring, the daily food is radish, spring cakes, and lettuce, which is called spring plate. From the Song Dynasty to the Ming and Qing Dynasties, the popularity of eating spring pancakes became increasingly popular, and there are records of the emperor giving spring plates of spring pancakes to officials at the beginning of spring. According to "Yandu Tour Chronicles" of the Ming Dynasty: On every spring day, (the emperor) gives spring cakes to all officials at the Meridian Gate. By the Qing Dynasty, the vegetable fillings eaten with spring pancakes became more abundant. Nowadays, people prepare vegetables stir-fried with bean sprouts, spinach, leeks, vermicelli, etc., and randomly put them into spring cakes when eating them. Eating spring pancakes at the beginning of spring means welcoming spring and praying for a good harvest. Tips for rolling method: Place the chopsticks on the spring cake, roll up one side of the spring cake along the chopsticks, wrap the lower end upward, hold it with your hands, roll up the other side, place it on the plate after rolling, and then lift the chopsticks out one by one. People with good skills will roll out spring pancakes as big as their mouths, making it easier to bite.
