Wash the onions and drain the water (set aside). Cut onions into appropriate lengths.

Bring the oil pan to a boil over low heat, add the chopped scallions, and use chopsticks to stir gently (do not oversize). Fry until the scallions turn golden brown and smell fragrant.

Pour half a bowl of light soy sauce, two tablespoons of dark soy sauce and two teaspoons of sugar into a clean small bowl and stir evenly. Slowly add the mixed seasoning into the scallion oil pot in batches. Turn off the heat immediately and wait for it to cool down before placing it in a clean bowl (if you make too much scallion oil seasoning, you can cool it down and put it in an airtight container in the refrigerator to keep it fresh for a longer period of time).

Boil water in another pot and add noodles. After the noodles are cooked, take them out of the pot and put them into a noodle bowl with chopsticks. Add the scallion oil seasoning prepared earlier, stir evenly and serve.
