Shredded radish noodles
Overview
Many Shiyan people who are away from home told me that after staying away for a long time, it has become a luxury to want to eat some food from Shiyan's hometown. Fortunately, the author is not bad at cooking. I often make delicious hometown delicacies and share them in the circle of friends, attracting a group of Shiyan people in Shenzhen to follow me. Although it doesn't taste exactly like the original food at home, it is definitely good and delicious. Today I will show you our Shiyan specialty delicacy, shredded radish noodles. In fact, it is very simple. Stir the shredded radish into the batter, add salt, five-spice powder, chopped green onion and minced coriander and fry it in an oil pan. I remember that when I was a child, I had shredded sweet potatoes and pumpkins at home and could do this.

Steps
-
According to the number of diners, I bought four radishes, but actually used two. Generally green radish is suitable.
-
Pour the flour into a basin, add water and stir into a batter, add the prepared shredded radish and stir. Use an iron grater to prepare the shredded radish. After evenly mixing, add salt and pepper, chopped green onion, coriander, etc. This is just the right amount.
-
Pour rapeseed oil into the iron pan until it is 80% hot. Use a spoon and chopsticks to scoop up the batter and add it to the pan for frying. When we make fried noodles in Shiyan, Hubei Province, we always use rapeseed oil, which is the only way to make them fragrant.
-
Use wooden chopsticks to flip the noodles until golden brown. Use a slotted spoon to add excess oil to the pot.
-
Fry the noodles until golden brown and serve on a plate.
-
The prepared noodles (noodles) are best eaten while they are hot.
