Salt and pepper potato shreds, a very impressive dish. Before I got married, I worked in a well-known local restaurant specializing in catering in Shaoxing. At that time, this restaurant created many firsts in Shaoxing and brought together first-class chefs from Shaoxing and even Guangzhou. But in the end, I went bankrupt due to the failure of my boss’s other investments. I would also like to express my regrets to my former boss. Every time when the boss invites a distinguished guest, salt and pepper potato shreds must be served. We have privately discussed why the potato shreds are served, and we are asked to serve diners who come to the restaurant without special reasons. This dish is not served. I really don’t know the meaning of this dish in the boss’ mind. The simplest ingredients can be made by other restaurants, but it is golden, fluffy and slightly embellished, and is placed in a round plate like a hill. It is indeed quite eye-catching. This dish is like a fascination in my mind. Every time I go to a different restaurant, I will order salt and pepper potato shreds. Until that year's New Year's Eve dinner in the restaurant, we ate our restaurant's salt and pepper potato shreds. When the potato shreds touch the lips, they break immediately. When a chopstick of potato shreds is put into the mouth, it really dances on the tip of the tongue, salty, fragrant and crunchy... and then crispy. This taste is indeed extraordinary. The shredded potatoes were made, and when my son tasted them (except for KFC fries, he doesn’t like potatoes), the first bite was, well, delicious. Then he asked his mother how such a simple thing could be so delicious. It looks like I will be making more of this dish in the future.

Wash and peel potatoes

First cut the potatoes into slices about 1mm thick, then cut into shreds about 1mm thick, soak them in water for about 10 minutes, and wash them again until the water is clear.

Pour cooking oil into the hot pan. When the oil temperature is about 50%, pour in some shredded potatoes (I fried them in three times, so I don’t need to prepare too much oil)

Fry until the shredded potatoes turn yellow, take them out and place them on kitchen paper to absorb the oil
