Braised Bean Soak Pork Ribs
Overview
This is a dish that my son and I both like. My son likes pork ribs, and I love the bean paste inside. It is soaked in soup. I can't finish it at one time. After steaming it the next time, the bean paste becomes more fragrant and more delicious the more steamed it is.

Ingredients
Steps
-
After washing the ribs, put them in the pot under cold water.
-
After the water boils, take out the ribs, wash them, and cut the ginger and garlic.
-
After the oil in the pan is hot, add ginger and rock sugar and stir-fry for a few times.
-
Add the pork ribs and stir-fry for a while, then pour in appropriate amount of cooking wine.
-
Add appropriate amount of light soy sauce, bean paste, a little vinegar and stir-fry for color, then pour water to cover the ingredients.
-
Add the bean paste. You can break the bean paste a little with your hands beforehand to enhance the flavor.
-
Transfer to pressure cooker.
-
Put the star anise, peppercorns, and garlic into the seasoning bag, add it to the soup, and put it on steam for 7-8 minutes.
-
Take it out and put it in a casserole (I use an enamel pot instead), add a little maltose (optional), and add an appropriate amount of salt as appropriate.
-
Cook over low heat until the soup dries up, then add a few drops of vinegar and serve.
