Fried eggs with chives

Leeks are pungent and warm in nature, and have the functions of strengthening the stomach, refreshing the mind, tonifying the kidneys, yang, and stabilizing essence. Therefore, it is also known as aphrodisiac. However, Chinese medicine believes that leeks can benefit yang, but this does not mean aphrodisiac. I once read an online novel about someone who gnawed leeks in the dark in the hope of aphrodisiac. This is simply nonsense. When I was a child, I was stuck with fish bones. The elders in my family asked me to eat leeks, and I swallowed them directly without chewing them. This was probably to use the fiber of leeks to wrap the fish bones. I don't know if this method is advisable, but it is indeed recorded in "Qianjin Prescription": To treat hundreds of insects that cannot enter the ears: pound leek juice and pour it into the ears. I used to hate leeks, but now I don’t like them much. I think you may know why – the taste is too great! But after marrying my husband, because he loved eating scrambled eggs with chives, I followed him by eating a few chopsticks, and gradually accepted the taste of scrambled eggs with chives. Adding a little starch to scrambled eggs helps to coagulate faster and make the color uniform, so I added a little more starch to today's scrambled eggs with leeks.

These are leeks from my own field, just cut. Wash and cut into coarse pieces.

Add a little water to the starch to make water starch. Add less water to mix the starch thoroughly without any dry powder.

Crack the eggs into a large bowl, add salt and beat evenly, add water and starch and beat evenly.

Pour the minced leeks into the egg liquid and stir evenly.

Heat oil in a non-stick pan.

Pour in the leek and egg liquid, turn the pot to spread the egg liquid evenly, and fry slowly over low heat. While frying, turn the pot from time to time to ensure even heating.

When the edges of the egg liquid are slightly browned, you can flip them over. I used two shovels to flip them together. There is a method online. Cover the pot and flip it upside down, then slide the egg cake on the lid into the pot. I think this method is great.

Flip and fry until the bottom side is browned.

Remove from pan, place on chopping board and cut into diamond-shaped pieces.
