First cut the potatoes into shreds, the thinner the better

Soak the whole thing in water. It doesn't take a lot, just enough to cover the potato shreds. Also remember not to pour out the water starch after soaking the potato shreds, it will be used later.

Prepare two garlics

Onions, ginger, and garlic are all ready.

Set aside dried chilies, adjust according to personal taste.

Heat oil in the pan, a little more so that the potato shreds are more flavorful.

Add onion, ginger and garlic and stir until fragrant

Add the Sichuan peppercorns and dried chilies and continue to stir-fry until fragrant, about 10 seconds.

Add shredded potatoes and stir-fry thoroughly

Add an appropriate amount of vinegar, about two tablespoons

When the potato shreds are a little dry and stick to the pan, add the water starch just now, just a little bit.

Fry for a while, then add soy sauce, about the same amount as vinegar, you can add a little more

Stir fry slowly

Add a little white sugar to neutralize the vinegar taste

Then add appropriate amount of salt

Sprinkle an appropriate amount of chicken essence before serving, or you can leave it out for a more delicious taste.
