Make the puff part first. Add butter to water, salt and sugar, put it into a milk pot and bring to a boil, then turn to low heat.

Wait until the butter batter has cooled to a point where it is not hot, about 60 degrees, and add the egg liquid in small amounts several times. Each time you add the egg liquid, make sure the batter and eggs are completely mixed before adding the egg liquid again.

Add the egg liquid and stir until it forms a triangular batter state of about 4 cm when you lift the chopsticks. That's it. The egg paste in the formula may not be added completely. If the above situation occurs, you can skip adding it.

Put the batter into a piping bag and pipe it into a baking pan lined with oilcloth or tin foil. You can also use a spoon to shape it and place it on the baking pan.
