This bread does not use butter, but uses the light cream that I did not use when decorating the cake. During the second fermentation, I also brushed a mixture of light cream and eggs. The liquid was also milk. The finished product is very soft and has a rich milky flavor. When eating, tear it into pieces with your hands. It is not only delicious, but also a process of enjoying the food. My grandson also liked this bread and ate several pieces by himself without moving.

  2. Put in the high-gluten flour, put the yeast powder on top, and finally bury the yeast powder with flour

  3. First mix at low speed until the dough forms a spike shape, pause the kneading process and let the dough rest naturally for 5 minutes, then add the whipping cream. The effect of putting cream afterward is the same as putting butter afterward. The oiling method can make the mixed dough more extensible and the film will be better.

  4. Then continue the dough kneading process. I use the Patric 9500 bread machine. The kneading time is 30 minutes. After kneading, the dough has basically reached the expansion stage

  6. Then cover with a damp drawer cloth and let the dough rise until doubled in size. Poke a hole and it won't bounce back.

  7. Mix 30 grams of light cream and 20 grams of egg white evenly and use to brush the surface. Soak the dried cranberries in rum in advance and take them out when used

  8. Divide the fermented dough into two parts, one is 430 grams and the other is 300 grams. This is mainly based on my own mold. It depends on your own situation. Cover with plastic wrap and let rest for 15 minutes

  9. Take a portion of the relaxed dough, roll it into a large piece, then cut it into 2-4 cm pieces, and then evenly brush the surface with egg milk mixed with light cream.

  10. Put it into the mold irregularly, arrange it in one layer, then brush it with a layer of egg milk, and then sprinkle with dried cranberries

  12. Small portions of dough are placed into round molds and placed in an oven to keep warm and moisturized until they double in size.
