Cut the duck meat into pieces and blanch them in water and set aside.

Prepare the required ingredients, cut the green onions into sections, slice the ginger, peel the garlic, and cut the carrots into cubes.

First heat a little oil and fry the drained duck meat for a while.

Use the remaining oil from frying the duck meat to sauté the garlic until fragrant, then scoop out the garlic and set aside.

After sauteing the ginger slices and onions, add the duck meat.

Add cooking wine, light soy sauce and sugar to the pot and stir-fry for a while.

Add hot water and lightly soak the duck meat.

Add 4 tablespoons of sour plum sauce, bring to a boil over high heat, then reduce heat to low, cover the pot and simmer for twenty minutes.

Add carrots and garlic and continue to simmer for about 15 minutes.

Simmer until the sauce thickens, sprinkle with green onions, stir-fry well and serve on a plate. If you feel the taste is too bland, add a little salt to taste.
