Main ingredients of custard buns: 200g high-gluten flour, 50g low-gluten flour, 100g milk, 22g butter, 5g yeast, 35g sugar, 50g water

Put all ingredients except butter into a container and knead into dough

Add butter and knead into a smooth dough. Let it rise until doubled in size

While waiting for the dough to ferment, make the custard filling: 3 egg yolks, 100g milk, 25g butter, 75g sugar, 50g low-gluten flour and 25g corn starch

White sugar + egg yolk + milk + butter (melted) stir well

Add flour and mix well

Pour the beaten egg yolk paste into a non-stick pan and put it on the fire. Heat over low heat and stir until mature

Divide the egg yolk filling into 45g pieces each. After the fermented dough is deflated, divide it into 75g pieces

Slightly flatten the previously divided dough (make sure it is thick in the middle and thin on both sides when rolling it out), wrap the custard filling ball, pinch and seal, with the seal facing down, and do everything in sequence.

Place the wrapped custard bread into the baking pan and ferment for the second time

Let the dough double in size. After fermentation is complete, brush the surface with egg wash.

Place in the middle rack of the preheated oven, heat up and down to 175°, and bake for 20 minutes
