Prepare soybean sprouts, beans, shredded pork, green onions, and ginger for fried noodles

Fresh noodles

After the pot is hot, add an appropriate amount of oil, add fresh noodles and spread them out, then change to medium heat

Turn the pot to heat the noodles evenly and turn them over

Brown both sides

Dish out and set aside

After the pot is hot, add oil, add star anise and fry until fragrant

Add shredded pork and stir-fry until it changes color

When it changes color, add onion, ginger and soy sauce and stir-fry

Add soybean sprouts and green beans and continue to stir-fry. When the green beans are cooked, add water, just enough to cover the vegetables

Add water and add salt, chicken essence and thirteen spices. After the water boils, cover the noodles on top

Flip over after 1 minute, cover the pot and simmer for another 2 minutes

After simmering for 2 minutes, use chopsticks to break up the noodles and serve
