Okra with Oyster Sauce

Now is the time when okra is on the market in large quantities. Blanch it and then mix it with oyster sauce. It is delicious. It's simple, refreshing and sweet. It's not greasy at all when you eat it on such a hot day. It's delicious.

Wash the okra and cut it into diagonal sections. If you like to cut it into circles, you can also cut it into circles. I just think it’s easier to pinch the okra when it’s cut into diagonal sections.

Chop the garlic and cut the millet and pepper into rings. The millet peppers are for the sake of appearance. They are not very spicy. A plate of green vegetables is dotted with a little red, which looks very nice.

Boil half a pot of water. When the water boils, add 1 tablespoon of oil and half a teaspoon of salt, and mix well. Adding some oil and salt when blanching vegetables can maintain their color and texture.

Pour the okra into the water and blanch it for a minute or two, turning it with a slotted spoon so that it is evenly distributed.

Remove the blanched okra and place on a plate. If you have cool boiled water or ice water, you can also cool it down after a while. Okra will produce sticky mucus after heating. This is a good thing, so don’t mind it.

Next comes the sauce. Pour a small amount of oil into the pot, about 20-30ml corn oil, add the minced garlic and millet pepper, and stir-fry until the garlic is fragrant. Then add half a bowl of water.

Add 1 tablespoon of oyster sauce and 1 tablespoon of light soy sauce, mix well, and after boiling, you can taste the saltiness. If it is not flavorful, you can add a little salt or a little more light soy sauce. Oyster sauce and light soy sauce are both salty. I thought they were flavorful enough, so I didn’t add any salt. If there is no oyster sauce, just add light soy sauce, salt, a little sugar, and a little chicken essence.

Once the sauce comes to a boil, cook for another two to three minutes and then turn off the heat.

Pour the cooked sauce over the okra, mix well and serve.
