Choose fresh pumpkin leaves and cut them if they have stems.

Gently scrub the pumpkin leaves with your hands (just like scrubbing clothes) to remove the hair on them, and that's almost it.

Blanch the washed pumpkin leaves in water (the pumpkin leaves can only be put down when the water boils), turn them over with a shovel a few times, and you can almost fish them out in two or three minutes.

After taking it out, rinse it with clean water.

Heat the pan. After the cooking oil is hot, put the garlic red pepper and sauté until fragrant. Then put the chopped pumpkin leaves and stir-fry. Add salt (those who like spicy food can add some chili powder) and then put the starch water that has been thickened before (remember not to pour it to the sides or there will be crispy rice. Pour it on top of the pumpkin leaves). If it is dry, add some water. After the juice is reduced, add MSG and it is ready to serve.
