Overview
Hand-rolled noodles are chewier and softer than machine-made noodles, and have a strong aroma of wheat, which is unmatched by machine-made noodles. When making hand-made noodles at home, you can mix and match any toppings you like, which is called Ji'er in Beijing dialect.
