Wash the hairtail and marinate it with ginger slices, salt and cooking wine for half an hour (ps: there won’t be so much for 2 people)

Dice tomatoes, slice garlic and set aside

Remove the ginger, rinse the fish with water, add cornstarch and catch evenly (you can also directly pat dry the cornstarch and fry)

Fry in the oil pan (be careful not to get splashed)

Leave oil in the pan, stir-fry garlic slices until fragrant, add tomatoes and stir-fry

Stir-fry the hairtail and add a bowl of water to test the saltiness. If it is salty, add some salt
