Cut the pork belly into cubes and pour in water, skimming off the foam.

Control the moisture, this step is very important.

Add a little cold oil, add sugar, and bring to a boil over low heat. When the sugar foam covers the oil surface, add the diced meat. (My own selfie, in order to ensure the quality of the candy color, the heat in this picture is slightly lower, for reference only)

Stir-fry until evenly coated with sugar color. Then, keep the fire low and slowly force out the oil in the fat.

After the oil is slowly forced out, add the onions, ginger and garlic. Increase the heat to bring out the aroma of onions and garlic.

Add enough boiling water (must be boiling water). Additive package. Leave it wide open for 15 minutes.

Add salt, reduce heat to medium and simmer for 40 minutes. The better the sealing of the pot, the softer the meat will be stewed.
