Spinach Pumpkin Soup
Overview
The most memorable thing is the pimple soup made by my mother. There is a small vegetable garden at home, and many vegetables are planted in it. Spinach is the most commonly eaten at home. Every time, my mother will ask me to pull out a few tender spinach, and then go to the chicken coop to touch two eggs, and make us a hot pot of pimple soup. It tastes so delicious!

Wash the spinach and cut into small pieces. (At this time, boil water in a small pot and prepare to blanch the spinach)

Turn the faucet into a dripping shape. Use chopsticks to catch the water droplets and stir the flour continuously. When there is still one-third of the dry powder, stop adding water and keep stirring until it slowly becomes flocculent and there is no dry powder.

After the water in a small pot boils, add the spinach and blanch it to remove the oxalic acid, take it out and set aside

Heat the oil in the pan and pour it out (this is called a sliding pan). Then pour half of the egg liquid into the pan to spread the egg skin. Turn the pan so that the egg liquid evenly covers the bottom of the pan. Use low heat until the egg liquid solidifies, matures, and is set. Then pour the remaining egg liquid into the pan to make the second egg skin.
