Fried purple potato shreds

I made Mexican burritos today and fried a potato shredded burrito to eat.

Wash the purple potatoes and peel them. (Potatoes are smaller)

Cut into shreds and wash with water several times to remove part of the starch, so that the fried potato shreds will be crispy.

Cut onions into sections and mince garlic.

Heat oil in a pan and saute minced garlic until fragrant.

Add shredded potatoes and stir-fry quickly.

Fry until slightly coloured, add oyster sauce and bonito powder and stir-fry. (My family likes oyster sauce, so just season it according to your own taste.)

Sauté until the potatoes are a little translucent and add the green onions.

Stir well.

The taste is similar to ordinary potatoes.
