Wash the outer surface of the purchased coconut.

Use a paring knife to cut off the top of the coconut meat and set aside.

Add fine sugar, agar powder and water and set aside; pour coconut water into a bowl. One coconut contains an average of 300ML of coconut water, so 3 coconuts contain a total of 900ML of coconut water.

Scrape out the flesh from the coconut with a stainless steel spoon.

Scrape out all the coconut meat and cut into small pieces. Set aside.

Put 300ML of water into the pot and then add 900ML of coconut water and heat over high heat.
