Prepare the northern tofu, remove the shells and heads of the green shrimps and wash the shrimp threads and set aside.

Cut the prawns into sections and marinate them in starchy cooking wine for ten minutes to remove the fishy smell.

Prepare onion, ginger, garlic and pepper oil.

Put onion, ginger, garlic, and pepper oil in the pot, pour in finely chopped Pixian bean paste, and stir-fry until red oil comes out.

Add the shrimp segments and stir-fry until they change color.

Pour light soy sauce, cooking wine, and sugar into the pot, bring to a boil, then pour in the diced tofu, bring to a boil over high heat, and simmer over low heat for three minutes to add flavor.
