There is always a food that brings back fond memories for you. This potato cake is one of the best memories of my childhood. When I was little, my mother used to make it for us brothers and sisters in a pan. Grate the potatoes into foam with a grater, then squeeze them dry, and leave the remaining soup to dry to make starch. Add green onions, salt, and a lot of oil to the squeezed parts, and spread them into small cakes. That's our favorite. Reliving the taste of the old days, it’s just that I didn’t squeeze out the water from the potatoes and added a little flour. It seems to have lost the fragrant and glutinous taste of childhood, but the memories and the beauty are still there!

  1. Peel and wash potatoes. Use the eraser tool as shown in the picture to rub it into fine powder.

  3. Add the grated potatoes, chopped green onion, about 3 tablespoons of flour and a little salt and mix well.

  4. Pour oil into a non-stick baking pan and turn on the induction cooker over low heat. Pour in some of the minced potatoes and spread evenly, not too thick.

  5. Fry both sides until cooked, roll out and serve on a plate.
