Their original name was Xiaofeng cakes. They were created by a female worker named Xiaofeng from a wealthy family named Wu in Xiguan, Guangzhou during the Xianfeng period of the Qing Dynasty. Chicken cake is one of the four famous cakes in Guangdong. (The above information comes from Baidu Encyclopedia) The traditional method of making chicken cakes is to marinate fat pork with sugar and wine for 1-2 weeks to form ice meat (the same principle as the layer of fat in the golden chicken sold in Hong Kong-style barbecue shops), and then bake it with southern milk and garlic. However, because the preparation of iced meat is time-consuming, and modern people are less and less interested in the taste of iced meat, today I used the flavor combination of chicken cakes and projected it on the recipe of Western-style cookies to launch this salty cookie with Lingnan flavor.
