I changed the low-gluten flour to medium-gluten flour and I was too lazy to open a new bag of flour for this time. Based on past experience, scones made with medium-gluten flour are also very good. If you follow the recipe, you may need to change some of the order. For example, it may be easier to knead the butter into a coarse powder by mixing the butter with the flour first. If you mix the cheese with the flour and then knead the butter, it will basically form a ball directly. It seems that the milk can be omitted, but I tried adding 1/4? 1/5? The dough will feel a little sticky, so stop it quickly and it will be fine. Bake until golden brown, overflowing with milky aroma, and so strong that it cannot be melted.
