Blanch the green bamboo shoots for one minute, remove and drain.

Heat oil in a pan and sauté minced garlic and chili until fragrant.

Pour in the green bamboo shoots and stir-fry over high heat for half a minute. Add salt, oyster sauce and sugar and stir-fry evenly.
