Hoof flower soup
Overview
It’s the Mid-Autumn Festival, and my favorite pig’s trotters must make an appearance. The large amount of collagen protein in pig's trotters can be converted into gelatin during the cooking process, which can effectively improve the body's physiological functions and the water storage function of skin tissue cells, so that the cells can be moisturized, maintain a moist state, prevent premature skin wrinkles, and delay the aging process of the skin. Pair it with kidney beans that strengthen the spleen and promote diuresis, and simmer it slowly in a casserole over low heat. The stewed hoof flower soup has a thick soup, the pig's trotters are tender and fall off the bones, and the kidney beans are soft and crispy. The ingredients melt in your mouth. It is a delicious and nutritious dish suitable for all ages.

Steps
-
This time I specially used large flowered kidney beans. I soaked the kidney beans in water half a day in advance
-
After washing the pig's trotters, put cold water into the pot, add 20 grams of rice wine and a few slices of ginger to remove the fishy smell
-
When the foam starts to rise, skim off the foam and cook for another 5 minutes
-
Remove the blanched pig's trotters and rinse away any remaining foam on the surface
-
Put hot water in a casserole, add blanched pig trotters, and add ginger
-
Add the soaked kidney beans, bring to a boil over high heat, then turn to low heat and simmer for 2 and a half hours
-
After simmering, add salt and pepper to taste and simmer for another 10 minutes
-
Stewed hoof flower soup, the pig's hoof is soft and fall off the bone, the kidney beans are soft, and the seasoning is very simple
-
When serving, you can sprinkle a little chives and eat it directly, or you can use chili oil, pepper oil, vinegar and light soy sauce to make a Sichuan sauce for dipping
