-
Put the onion, ginger, and pepper in a clean container and soak it in boiling water for one to two hours. I don’t like onion and ginger in the stuffing, so use onion, ginger, and pepper water instead. Because mutton stuffing is used, Sichuan peppercorns are used to remove the fishy smell.
-
Onion, ginger and pepper water soaked for two hours.
-
Drain and set aside.
-
Add salt, MSG and thirteen spices to the mutton stuffing.
-
Use the onion, ginger, and pepper water and beat until thick. Knock on the blackboard, the meat fillings for steamed meatballs and wontons should be beaten with water, and the fillings for dumplings and steamed buns should be beaten with oil.
-
Peel and slice the winter melon.
-
Pour the winter melon under cold water and start to cook until small bubbles begin to form around it. Then you can make the meatballs.
-
Use a spoon to shape the meat filling into a round ball. If you are not familiar with it, you can squeeze it with your hands, but remember to wear gloves.
-
Stir all the meatballs and turn on high heat.
-
Beat off the scum and make sure it's clean.
-
Just add some salt before serving. If you like coriander and pepper, you can add some.
