I made 2 flavors of pig ears today, this is the red oil flavor

Boil the pig ears in a pot of cold water over medium heat for 25 minutes and simmer for 5 minutes. Add salt, pepper, ginger slices, and green onions [I used onions instead]

Use chopsticks to insert it. There is no blood and it penetrates easily. It’s just right

From the small part of the ear, use an oblique knife

Cut into thin slices and flatten with a heavy object; then place on a plate

Spicy sea pepper, soy sauce, sesame oil, sugar, chicken essence, MSG, cooked sesame seeds, peanuts, red sea pepper, green onions, mix into sea pepper water and pour it on top

Sprinkle chopped green onion, cooked peanuts, and red sea pepper on top
