Simple and delicious snack - golden coconut balls
Overview
It was rare that I took a nap today, and I felt very energetic when I woke up. I ate a few cherries, looked through the refrigerator, and saw that there was a lot of butter, so I decided to make something, and here I am, these shredded coconut balls. I often saw them in cake shops in the past. They were yellow and looked very tempting. In fact, they didn’t taste good at all when I bought them. Now I know that the yellow color is also the function of pigments, so the ones I bake are not that bright at all. However, the ones I bake are crispy on the outside and soft on the inside, and full of coconut flavor!

Ingredients
Steps
-
The ingredients are very simple
-
Soften the butter, add sugar, mix well, then beat slightly
-
Then add the egg yolks one at a time and mix well
-
Add milk gradually and mix well
-
Finally, add shredded coconut, milk powder, and low-gluten flour, and gently knead into a dough. Do not over-knead
-
Divide the dough into small balls, try to make them even in size, about 30 grams each, to avoid them being undercooked when baking
-
After dividing, wrap a layer of shredded coconut
-
Ready to go into the oven, 180 degrees, bake for about 20 minutes
-
It’s out of the oven, hurry up, it has such a strong coconut flavor. Some people don’t like this smell, but I have a soft spot for it
-
Pair it with a few cherries, it’s pretty!
