Mixed Spinach
Overview
Summer is coming soon. If you are used to eating spinach with nuts, yuba and cucumber, try it with sesame sauce. It will be just as refreshing and delicious. If you don’t believe me, give it a try.

Wash and blanch spinach.

After blanching, drain it under cold water, squeeze out the water and cut into sections for later use.

Prepare soul sauce: sesame paste, salt, sugar, MSG.

Remember to use vinegar to make sesame paste, not water. Add more sugar and less salt and MSG. If you feel the taste is not enough, add it little by little. When it's all done, add mustard.

After mixing the sesame sauce, pour it on the spinach and mix well.
