Wash and peel a sweet potato (about 400 grams).

Cut into strips (about the same thickness as your fingers, not too thin, but thick).

Steam until cooked (about 10-15 minutes).

These are steamed sweet potato fries, slightly steamed.

Line a baking sheet with oiled paper and place the sweet potato fries evenly on top, leaving a gap in the middle.

Bake in an air oven at 90°C-100°C for 90 minutes (I use a Cass air frying oven, which is a small air oven. It will be heated evenly no matter how you put it, so you don’t have to worry about burning it).

When baking for 60 minutes, take out the sweet potato fries and continue baking.
