Fried eggs with chives
Overview
The fragrance across the screen is simple and convenient. I have liked this dish since I was a child. Now when I fry it, I like to add soy sauce instead of salt, because it is difficult to add salt evenly, and some may be too salty and some may be too bland. Adding soy sauce makes it easier to stir-fry evenly and the taste is more fragrant.

Wash the chives and cut into sections. Cut into sections so you can add green onions to eat later. It’s very fragrant.

Heat oil in pan.

Beat in the eggs, as much as you want to fry. Move quickly, otherwise the one in the front will get old and the one in the back will not be cooked yet.

First use a spatula to break up the egg yolks.

Start stir-frying, shovel it all the way to the bottom, and flip it up, don't be too rough.

After basically turning them over, fry them twice. Some of them are thick and still contain egg liquid, so you can press or cut them.

Pour in appropriate amount of soy sauce and stir-fry quickly.

After the soy sauce is stir-fried, immediately add the chives and stir-fry twice until the onions are cooked and turn off the heat.
