Spicy bamboo shoots
Overview
I really don’t know whether this kind of bamboo shoots should be called sliced bamboo shoots or dried bamboo shoots. When I buy it at the vegetable market, it is soaked in water. It is very tender and fragrant and crispy when fried. I don’t know how others eat it? In our family, we always add Hunan chopped chili peppers when we stir-fry. I think they are a perfect match and a killer addition to meals.

After buying the bamboo shoots home, wash them with clean water, drain them and set aside for later use.

Heat the pot, don't add oil yet, add the dried bamboo shoots and stir-fry until the water is reduced, then add the oil and salt and stir-fry.
