Healthy hand cakes
Overview
I admit that I am a person who is relatively lazy at taking photos, because when cooking, I often have water in one hand and oil in the other. It is really troublesome to take pictures step by step. I often forget to take photos only when the food is on the table. I woke up early today and had plenty of time, so I took a few step-by-step pictures with my cell phone. This is my first time making hand cakes. Both the appearance and taste are very good. I am very satisfied with it. The day before yesterday, I happened to see durian flying pancakes being made in a Thai restaurant, so I watched them for a while, and after learning a little experience and my mother-in-law's Shandong pancake techniques, today's hand pancakes were born.

Steps
-
Weigh 250 grams of flour. (Can make 3 cakes)
-
Add a little salt to the flour and stir the flour with chopsticks while adding water to form a fluffy consistency.
-
Knead the flour into a smooth dough.
-
Divide into 3 equal portions.
-
Apply a thin layer of oil on the cutting board. After the dough has risen for fifteen minutes, take a piece of dough and flatten it with the palm of your hand.
-
Then use a rolling pin to roll the flattened dough into a thinner sheet.
-
Brush the surface of the dough sheet with melted butter. Then fold it from bottom to top and fold the dough into a long strip.
-
Let the long strip of noodles rest for 2 minutes, pinch one end with one hand, and stretch the long strip of noodles. Then coil it up from one end and roll it into a spiral. Wake up for ten minutes.
-
Flatten the spiral shape with your palms.
-
Use a rolling pin to roll into a round shape of appropriate thickness.
-
Brush a non-stick pan with a thin layer of butter and place the round cake pan.
-
When one side is hard, flip and fry the other side until both sides are browned. The hand cake is formed.
-
Prepare the side dishes: fry the eggs, bacon, and lettuce in a pan and season with a little salt. Brush the hand cakes with a layer of chili oil.
-
Arrange fried eggs, bacon and lettuce in sequence.
-
Finally sprinkle with salt and pepper.
-
Roll up and enjoy.

It's really delicious.
