Remove heads and devein from fresh shrimps, open backs, and set aside shrimp heads

Add shredded green onion, shredded ginger, oil, salt and fish soy sauce to the shrimp body, mix well and marinate for ten minutes

Heat the pan with cold oil and add the shrimp heads, stir-fry the shrimp oil, add water and simmer for ten minutes

Peel and slice the winter melon into thin slices and place them on the bottom of the pot (I forgot to take a picture of the winter melon 😂). Arrange the marinated shrimp on the winter melon according to your preference

Pour the cooked shrimp oil on the arranged winter melon and shrimp

Bring to a boil over high heat and simmer over low heat for 10-15 minutes until the winter melon and shrimp are cooked

The winter melon is transparent (´-ω-`) and it melts in your mouth. The soup is mellow and fragrant
