Traditional home-cooked staple food----scallion pancakes
Overview
When I was a kid, my grandma was best at making scallion pancakes. They were so fragrant and crispy that they made me salivate. Now that my grandma is 80 years old, it’s time for me to make her some scallion pancakes. Ever since I was little, I have watched my grandma do it, and I have already memorized the steps by heart. Serve the crispy scallion pancakes right away~~~

Take an appropriate amount of flour. I used the flour in the picture to make 2 scallion pancakes.

Add appropriate amount of water and knead the dough.

Relax the dough from the second step. Prepare green onions.

Cut the onion down the middle and chop it as finely as possible.

Cut the green onions into finely chopped green onions and set aside.

Place the relaxed dough on the board and prepare to roll out the cake

Sprinkle some salt evenly on the placed dough and press it lightly with your hands.

Spread a layer of peanut oil evenly on the salted dough, not too much. I did this by lifting up a corner and dipping it. As shown in the picture below (the second picture of cake is shown)

You can also use a brush. Anyway, a uniform layer of oil is enough. The method is up to you~~

Sprinkle chopped green onions evenly on the oiled pancake.

Roll up slowly starting from one side, being careful to pinch the edges tightly to avoid oil leakage.

Heat the pan over low heat. Because there is oil in the pancake, there is no need to put oil in the pan. Gently flatten the pancake with your hands. You can also roll it out on a panel. To prevent oil leakage, I usually flatten it gently with my hands in the pan.

Heat over low heat, be sure to turn over and make the cake a little thinner. It will take about 5 minutes to get out of the pan. When you see 2 sides become crispy and golden brown, it's ready to be cooked.
