Chinese toon and eggs
Overview
My mother has a specialty dish, boiled eggs. As the name suggests, it makes the eggs grow taller. How to do it? It’s actually a deluxe version of fried eggs, but the eggs are made into honeycomb briquettes. Miraculously, the taste is also upgraded! Needless to say, it is fragrant, but the key point is that it tastes very moist. It can be used as a snack or as a side dish. The best thing is to pair it with soup. It can absorb the flavor and greatly enhance the freshness. Mom likes it with pork bone soup. As far as I know, only my mother can cook this dish, and she doesn’t make it very often. Relatives and friends are so lucky to eat it that they all marvel at it. Moreover, this dish is suitable for cooking over firewood in large pots and stoves in rural areas. No flames are needed. The red fire (similar to charcoal fire) is used to bake slowly. The eggs will rise slowly and will rise very high. It looks very good! However, nothing is impossible in the world of foodies! I can't keep my mother close to me, let alone run to my hometown every day, so I have to do it myself. So there is a gas stove version of the egg riser. After testing it a few times, it looks very similar! Friends who like innovation can give it a try. Oh, by the way, my mother always uses chives to accompany me. My supporting role today is toon~~my love👄

Steps
-
Blanch the toon head in water, take it out when it changes color, control the water, and chop into pieces. Don't squeeze out the water, just keep it dry. There are too many toons, so I only took three roots to make the incense head.
-
Beat the eggs, mix as evenly as possible, add toon and a little salt (adding less salt can highlight the aroma of toon and eggs), and mix well.
-
Pour twice as much cooking oil into the pan, add ginger slices and fry over low heat until fragrant.
-
Keep the pot away from the fire, pick out the ginger slices, pour the hot oil into the egg liquid, quickly cover the lid and fry over low heat for ten minutes. Turn off the heat and simmer for three minutes.
-
My eggs were not stirred well because I used a stainless steel pot, which conducts heat too quickly, so the fire was too high and the bottom color was slightly darker. But the taste is not affected.
