During the Qingming Festival, it’s time to eat green dumplings again. Every year at this time, my mother-in-law always prepares something for us, and this year I want to make it myself. Qingshui is the juice that my mother-in-law beats with wheatgrass, and then adds a little lime water. Yes, you read that right, it is lime water. I don’t know why I added it, but it really makes it more fragrant. Wheat grass is only available in this season. My mother-in-law will buy a lot of it at one time, put it in a bottle and store it in the refrigerator, so that it can be taken at any time, and you can also eat green dumplings in winter. I stir-fry the bean paste myself. Boil the red beans with water. Stir with a food processor, then transfer to a pot and stir-fry. Add sugar and oil until the water dries up. The small red beans are grown by my mother-in-law. They are more delicious than the ready-made red bean paste bought in the supermarket
