Red bean, peanut and red date rice dumplings
Overview
This Dragon Boat Festival makes the most rice dumplings, with various fillings. I can’t help but like eating rice dumplings, haha. This time I made red beans, peanuts and red dates. They were delicious. The beans and peanuts were soaked in water in advance. The rice dumpling leaves used this time are dried rice dumpling leaves, which have a strong aroma.

Soak the glutinous rice in water in advance for more than five hours. It is best to soak it one night in advance and use it the next day

Red dates, peanuts and red beans are also soaked in water at the same time as the glutinous rice. Boil the dried rice dumpling leaves, take them out and soak them in cold water

Use scissors to cut off the roots of the rice dumpling leaves to avoid breaking the leaves when wrapping

Fold the rice dumpling leaves into a funnel shape as shown

Add glutinous rice, peanuts, red beans and red dates

Wrap into rice dumplings and tie them with rope

Put the wrapped rice dumplings into the pot, add water, it is better to pass the rice dumplings, bring to a boil over high heat, then turn to medium to low heat and simmer for about 2 hours. Don’t take out the cooked rice dumplings in a hurry, soak them in the soup overnight, they will taste better and the rice will be more glutinous
