Preparation: Hsinchu rice noodles are very fine and soaked in water for about 20-30 minutes.

Boil the water in the electric pot and blanch the rice noodles for one minute.

Take out, drain and put on a plate, add dark soy sauce and mix well and set aside.

Preparation: lean meat, green onions, coriander.

Cut the lean meat into thin slices with a knife, add light soy sauce, pepper, cornstarch, and peanut oil and marinate for a while.

Cut onions and coriander into sections.

Chop the green onion into mince and add the lean meat together.

Heat oil in a pan, add marinated lean meat and stir-fry until fragrant.

Add the green onion and coriander segments.

Then add the rice noodles.

Use chopsticks to stir the rice noodles so that they are evenly heated.

Stir-fry over high heat for about two minutes (I only used dark soy sauce to taste and it was a bit light, so I added a little light soy sauce).
